This is set when you Add Securities to the test. In the lower left corner of the add box, the Periodicity field should be listed.

Alberto,
Before you attempt to change the periodicity, you have to have a stock(s) selected in the "add securities" window. Just click on the stocks you are going to add to the EST and then you will notice the periodicity drop-down box in the lower left corner will become activated.
Hope this helps.

I tried to select one or more stocks in the add securities window, but the periodicity drop-down box remain gray. What could be the problem?

Which version of MetaStock are you using? I believe there was a bug in version 8.0 in regards to changing the periodicity of Local Data, but this was fixed in 8.01.

You must Remove All securities and start the "Add Securities" process over again. Open the appropriate folder, mark required securities (Ctrl+A for selecting all securities in the folder), THEN and only then select the required periodicity. As Pyradius has said, version 8.0 has a bug. In fact there are too many bugs in the 8.0 EST to allow you to achieve anything useful. Give up gracefully and get version 8.01. (This should still be available free from Equis for registered users).
Once securities are loaded with the default daily periodicity you cannot change to another periodicity. Periodicity must be set before clicking the "Open" button for your first selections. Securities added after the initial selection will then default to your chosen periodicity.
The trick is to mark the first selection and change the Periodicity setting BEFORE clicking the "Open" button for the first time.
